Weight Watchers 2 points/slice Banana Bread

Featuring my new best friend, teff flour, used in Ethiopian cuisine to create injera. Teff is gluten free, so first thing you have to do is add loads of gluten to this recipe.

3 ripe bananas
2 eggs
1 tbs vanilla
1/3 cup Truvia
1/4 cup Yacon Gold
2 tbs butter, softened
1/4 tsp salt
1 tbs honey

Whip it all together in your Kitchenaid. Separately whisk together:

1 1/4 cups Teff flour
1/2 cup vital wheat gluten
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/3 cup pecans

Add to the wet ingredients, stir until just combined, and pour into prepared loaf pan. Bake at 350 F for 40 min or until a toothpick comes out clean. Cool and eat.

Weight Watchers point count:

2 tbs butter 10 points
1 tbs honey 4 points
1/4 cup Yacon 5 points
1/3 cup pecans 8 points
Total 27 points, so I’m calling it 2 points/slice for 12 slices.

Our verdict: totally worth the 2 points. Nice texture, and the flavor is correct — plenty of banana taste and just sweet enough.
