about the limoncello: that’s mario batali’s recipe, with one and a half tweaks. it has less sugar than his, and less water too. also, we usually make it out of the lemons that grow in our backyard, these really REALLY lemony lemons with massively thick skins. the resulting limoncello is sweet but not disgustingly so, and if you can find a thick-skinned lemon, i wouldn’t alter it. but if you can’t, make all the simple syrup, but taste it after adding about half and then adjust from there.
